1/2 tsp butter or margarine
1 cup all-purpose baking mix
1/2 cup milk
1/2 cup blueberries
powdered sugar & maple syrup, optional
Preheat oven to 425. Put the butter in the Small Bar Pan and spread it over the bottom of the pan using a paper towel.
Whisk the baking mix, milk & egg just until the large lumps disappear. (The batter should have small lumps.) Pour into bar pan, then sprinkle the blueberries over the batter.
Bake for 13-15 min or until the top is light golden brown. Carefully remove the pan from the oven.
Sprinkle powdered sugar over the top of the pancake, if you’d like, then cut into 6 squares. Cut each square in half from corner to corner to make 12 triangles. Serve with syrup, if desired. Enjoy!
