3 cans of corn (the regular size can), drained & rinsed OR about 4.5 cups of fresh corn (frozen doesn’t work with this recipe)
1/2 cup chopped red bell pepper
1/2 cup chopped red onion
1 cup finely shredded cheese (any flavor) OR 1/2 cup bacon pieces or a combo of the two
1/2 cup mayo to start
1 cup or more of crushed chili fritos
Mix the first 5 ingredients. Add more mayo if you need more to bind the salad together. Add the fritos at the last minute so they stay crunchy longer.
