Ingredients for the cake:
1 c flour 1c sugar
1tsp baking soda 1 egg
1tsp vanilla 1 can fruit cocktail drained (reserve some juice
in case batter is a little dry)
Mix cake ingredients. Pour into greased 8X8 pan. Bake for 45 minutes in a 350 oven.
Ingredients for the topping:
½ c margarine 1 c sugar
1 c evaporated milk ½ c coconut
½ c nuts (optional)
Melt margarine over low heat. Add sugar and evaporated milk. Cook (a slow boil, about 15-20 min) until thickens. Add coconut and nuts. Pour over cooled cake. Hint: I poke holes in the cake with a fork all over to help the topping get into the cake easier.
