2 cup plus 4 Tbsp flour
1 c butter or margarine, softened
1/2 cup powder sugar
2 cups sugar
6 Tbsp lemon juice
1 Tbsp lemon zest
1 tsp baking powder
Combine 2 cup flour, butter and powder sugar in 13 X 9. Mix with fork or pastry cutter and press in bottom of pan. Bake 20-25 min at 350. You want the crust lightly done, not browned.
Beat eggs with mixer. Add sugar and blend well. Add lemon juice & lemon zest, beat well. Add baking powder and 4 Tbsp flour, beat well. Pour over hot crust (do not let the crust cool).
Bake 20-25 min.
Cool completely, sprinkle with additional powder sugar.
