2 pkg (8.8 oz each) microwavable rice (such as Uncle Ben’s Ready rice)
2/3 cup rice vinegar
2 tsp sugar
1 1/4 tsp salt
1 med size cucumber, peeled, seeded and cut into 1/2 in pieces
1 1/2 cups surimi (about 8 oz), cut into 1/2 in pieces (Imitation crab)
12 Boston lettuce leaves, rinsed and dried
6 TBSP finely crushed wasabi peas (optional)
Microwave rice according to pkg directions. Place in med sized bowl and stir in vinegar, sugar and salt; let sit 10 min.
While rice sits, cut each avocado in 1/2. Cut 3 of the halves into 1/2 inch chunks. Cut remaining half into 12 slices; set aside.
Gently stir avocado chunks, cucumber and surimi into rice.
Fan 2 lettuce leaves on a plate. Top with 1 cup rice mixture; repeat for 6 servings. Garnish each with 2 avocado slices and 1 TBSP crushed wasabi peas, if desired.
How I tweaked it for my family.
I made minute rice instead of the microwave packaged rice. I made the whole box, it said it made 6 – 1/2 cup servings. It was a little less than the other so I reduced the vinegar, sugar and salt by 3/4.
I chose to use carrots, green onions and red bell peppers along with the avocado and imitation crab instead of the cucumber. Our family likes those veggies better. You can choose whatever you think your family will enjoy.
We used the lettuce leaves as wraps instead of a salad. The kids could handle it better instead of cutting through the lettuce leaves. Still made a mess, but we had a great time.

Bamboo medium bowl, snack tray, petite bowls, snack bowls and spoons.
Stainless Steel bowl to keep the rice warm.
Measuring cups and spoon.
