2-3 c cooked chicken or turkey, diced
1 can green chiles (4 oz), drained
2 cans cream of chicken
12 oz sour cream
2-3 c shredded cheese (cheddar, Monterey jack, pepper jack, or mix), divided
A couple handfuls of broken tortilla chips
Dash of tobasco
1-2 Tbsp southwest seasoning mix
- Mix together soup, sour cream, chiles and most of the cheese. Fold in chicken and chips.
- Put mixture in a 9X13 pan. Sprinkle remaining cheese on top.
- Bake 20-25 min at 350, until cheese is melted and bubbly.
- Serve with chips.
- You can also put it all together in the Deep Covered Baker from the Pampered Chef. Put the lid on and microwave for 20ish minutes. Works just as well and the oven didn’t heat up the house.
